Wild Mushroom Toast

Warm olive oil and 2 tbs of butter in a cast iron skillet over medium heat. Add mushrooms and toss to coat, then cook for about 10 minutes, stirring occasionally. Try not to move them around too much, you want to let the edges to get browned and crispy. Add garlic and thyme and cook for another minute, then deglaze with the white wine, scraping up all the brown bits. Continue to cook until all the liquid is evaporated. Add kosher salt and fresh black pepper.

Toast a few slices of sourdough bread until golden and slather with the remaining butter. Tumble the mushrooms over the toast and finish with more fresh thyme.
